This recipe was recently prepared for one of our personal chef dinner parties, a cozy evening with friends where the menu leaned into colorful, seasonal flavors. The roasted beets add sweetness, the goat cheese brings tangy creaminess, and the arugula gives a fresh, peppery bite. Finished with a drizzle of honey, these crostini strike just the right balance of elegant yet approachable.
Roasted Beet, Goat Cheese & Arugula Crostini
Ingredients
- 1 baguette, sliced diagonally
- 4 medium-sized beets, peeled and diced
- 2 T olive oil
- 4 oz. goat cheese (plain or herbed)
- 3 T milk or cream
- 2 cups baby arugula
- Honey, for drizzling
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment or aluminum foil.
- Roast the beets. In a bowl, toss diced beets with 1 T olive oil. Spread in an even layer on the baking sheet. Roast 25–30 minutes, until tender. Remove and set aside.
- Toast the baguette. Lower oven to 350°F. Arrange bread slices on a baking sheet and toast 10–15 minutes, until golden. Cool slightly.
- Prep the goat cheese. In a small bowl, whisk together goat cheese and milk until smooth and spreadable. Adjust consistency as desired.
- Assemble the crostini. spread goat cheese mixture on each toasted slice, top with arugula and roasted beets, and drizzle with honey. Serve and enjoy!
